Cheesy Pineapple Meatballs
juicy pineapple chunks with plump meatballs in a cheesy sauce

Ingredients
2-15 oz. cans pineapple chunks in syrup
1/2 cup sugar
2 teas. flour
1 large egg, beaten
1-1/2 cup grated sharp cheddar cheese
1/2 bag Simek's original meatballs (about 20 meatballs)
1/2 cup panko
1/4 cup flatleaf parsley
1/2 teas. garlic powder
Directions
Preheat oven to 350 degrees.
Thaw meatballs.
Drain pineapple, reserve syrup.
Combine sugar and flour. Blend into beaten egg.
Stir sugar mixture into reserved pineapple syrup. Mix well.
Cook syrup mixture over medium heat until thickened.
Layer pineapple chunks and meatballs in a 9 x 13 pan srayed with cooking spray.
Sprinkle with one cup of cheese, then pour the syrup mixture over the cheese.
In food processor blend panko,garlic powder, parsley and 1/2 cup cheese. Sprinkle evenly over the sauce.
Bake for 30-35 minutes or until bubbly.
