Green Chile Meatball Stew

The meatballs absorb all of the wonderful flavors in this amazing stew!

Ingredients

  • Original Style Meatballs
  • 1 package La Modena Vermicelli
  • 6 cups Water
  • 2 tablespoons Chicken Bouillon
  • 1 Yellow Onion - cut into inch strips
  • 1 13oz Bueno Green Chile (hot) or 1 pound fresh Green Chile (chopped)
  • 2 14oz canned Crushed Tomato
  • 1 bag Original Simek's Meatballs
  • 2 15oz canned Pinto Beans
  • 1 8oz canned Tomato Sauce
  • 1 15oz canned Sweet Corn
  • 2 15oz canned Green Beans
  • 3 cans of New Potatoes, chopped
  • 2 teaspoons Black Pepper
  • 3 teaspoons Onion Powder
  • 3 tablespoons Oregeno
  • 2 tablespoons Granulated Garlic
  • 1 tablespoon Crushed Red Pepper (or to taste)
  • Optional- Tortilla Strips

Directions

  1. In a large pot, brown the vermicelli in olive oil
  2. Add water, bouillon, onion, green chile, potatoes, crushed tomato, meatballs, pinto beans, tomato sauce, sweetcorn (juice, too!), greenbeans (drained), pepper, and other seasonings
  3. Bring to soft boil, cover and simmer on med/low for about 90 minutes
  4. Add tortilla strips (optional)
