Robust Italian Pasta & Meatballs

This is a meal that is full of flavor and light on the calories! It is sure to be a hit with your family and friends!

  • Prep Time: About 15 minutes. Hint: Chop all the veggies you will be using for the week so you have them on hand and ready to go.
  • Cook Time: 20 - 25 minutes
  • Serving Size: 1 1/2 Cups, with 3 - 4 meatballs
  • Total Servings: 8

Ingredients

  • Simek's Italian Style Meatballs
  • 1 med/lg Onion, chopped
  • 2 - 3 colored (green, yellow, orange or red) Bell Peppers, chopped
  • 1 10 oz. bag of Spinach, chopped
  • 1 TBSP of minced Garlic (I use the stuff in the jar)
  • 4 large ripe Tomatoes, chopped
  • Italian Seasoning, a good palmful
  • 1/2 TBSP Parsley
  • Salt and Pepper to taste
  • 1/2 box (13.25 oz.) of Whole Grain Linguine Pasta, cooked el dente`
  • Drizzle of Olive Oil
  • Opptional: Parmesan Cheese
  • *If you don't have fresh tomatoes, you can substitute canned tomatoes (whatever kind you like).

Directions

  1. Bake Simek's Italian Meatballs as directed on the package.
  2. Cook Linguine in lightly salted water until el dente`, then drain.
  3. Saute` peppers, onion, and garlic in olive oil until tender.
  4. Add tomatoes, seasonings and spinach, cook on med. heat with lid on for about 10 minutes.
  5. Add pasta and Simek's Italian Meatballs and toss. Cover and let rest for 5 minutes.
  6. Top with parmesan cheese, if you'ld like, and serve!
