Meatball Caserecci Fresca

  • Ingredients

    Sauce:

    ¼ cup olive oil
    1 bulb garlic, minced
    ¼ cup balsamic vinegar
    ¼ cup sweet white wine
    ¼ cup extra virgin olive oil
    1 tsp sea salt
    Pinch of fresh ground black pepper

     

    Pasta:

    3-4 cups cooked pasta
    1 ½ cups roasted tomatoes (or fresh if you prefer)
    2 cups baby spinach
    Salt & pepper to taste
    Parmesan to top (optional)

  • Directions

    1. Bring water and pasta to a boil.
    2. While pasta is cooking, combine all ingredients for the sauce, and whisk.
    3. Once noodles are cooked, drain and rinse and add back into the pot.
    4. Stir in roasted tomatoes (or fresh if you prefer), spinach, and sauce.
    5. Simmer on low heat until spinach has wilted.
    6. Top with parmesan and serve warm. You can also serve cold as a delicious pasta salad!
