12 Small Red Potatoes, diced into pieces
Half of a Red Onion, chopped
3 Cups Fresh Pineapple, sliced into chunks
1 Red Pepper, cut into pieces
1 Tablespoon Olive Oil
Fresh Ground Pepper
1. In 8”x13” pan (or campfire safe cast-iron pan) place tinfoil to cover bottom and sides, and set aside.
2. In large mixing bowl, mix together meatballs, potatoes, onions, pineapple, peppers, and olive oil. Sprinkle in fresh ground pepper to your liking, if desired.
3. After all ingredients are mixed together, pour into tinfoil lined pan and spread evenly. Bake for 30 minutes at 375 degrees or cook over campfire for 10-15 minutes.
