4 Tbsp Soy Sauce
2 Cups Shredded Daikon
2 Cups Shredded Carrots
1/4 Cup Chopped Cranberries
1/4 Cup Sugar
1/2 Cup Red Wine Vinegar
Demi Baguette Sliced in to cocktail size sandwich slices (enough for 12)
Pickled Daikon and Carrot Mixture
Combine daikon, carrots, cranberries, sugar and red wine vinegar, making sure all ingredients are well mixed. (Pickled mixture can be placed in sealed container and kept overnight or for a few days).
Heat meatballs in sauce pan with soy sauce, warming throughout.
Smear mayo on baguettes and place approximately 2-4 heated meatballs on mayo, adding jalapenos and chopped cilantro to your liking on top.
