Turkey Meatball Thai Curry

    1½ Tbsp thai red curry paste
    1 Can regular coconut milk
    1 Can bamboo shoots, drained
    1 Bunch fresh green beans, cleaned and trimmed
    1 8oz Packag of basil leaves
    1 Lime for juice
    1 red chili, sliced
    4 Cups basmati rice

  • Directions

    Heat Turkey Meatballs in pan until warmed through, set aside. In separate heated sauce pan, heat curry paste on high for one minute and then adding in the coconut milk and half a can of tap water. Bring mixture to a boil and stir, making sure to smooth out the curry paste.

    Add Meatballs, green beans and bamboo shoots to curry paste, simmering for 5-7 minutes, until beans are to desired tenderness. Top curry with lime juice, basil leaves and sliced chilis and serve over bed of basmati rice.
